Plum-Ginger Relish Increasing the oil and vinegar will produce a tasty salad dressing for greens or roasted vegetables.
3 red or black plums, pitted, finely diced 1/2 red pepper, finely diced 2 tablespoons finely diced red onions 2 tablespoons finely diced scallions 2 tablespoons chopped cilantro 2 tablespoons rice wine vinegar 1 teaspoon lemon or lime juice 1 teaspoon pickled ginger, minced 1 teaspoon sugar 1 tablespoon vegetable oil Salt to taste
In a small bowl, combine all ingredients and mix well. Serve at room temperature with kabocha cakes. Makes about 1-1/2 cups.
