Put 3 cuts in the side of the catfish and stuff with 1 slice per cut of the ginger and garlic. Add salt and pepper to the flour and roll the catfish in the flour. Deep-fry the fish in 325-degree oil for 6 to 8 minutes.

¼ cup soy sauce 1 jalapeno, sliced 3 slices fresh ginger 1 teaspoon brown sugar juice of one orange Method: Bring all of the above ingredients to a boil. Pour over catfish and serve. Serves one.
