BANANA-BERRY SUPREME FOR TWO
1 egg -- beaten
1 cup milk
2 tablespoons sugar
1 teaspoon cornstarch
1/8 teaspoon vanilla extract
1 large banana -- sliced
3/4 cup strawberries -- quartered
1 egg white
1/8 teaspoon salt
2 tablespoons sugar
Combine egg and milk in top of double boiler. Combine 2 tablespoons sugar
and cornstarch; stir into egg mixture. Cook over simmering water until
mixture thickens, stirring constantly. Remove from heat; stir in vanilla.
Cover and chill. Divide banana slices and quartered strawberries evenly into
two ovenproof dessert cups. Spoon custard over fruit. Beat egg white (at
room temperature) until foamy; add salt and continue beating until soft
peaks form. Gradually add 2 tablespoons sugar, beating until stiff peaks
form. Spoon meringue into a ring over custards. Bake at 425 degrees F. for
three minutes or until the meringue is lightly browned. Chill before
serving.
