This is a modified reciepe for carmel corn with variations at the end. This reciepe is so good that I have converted carmel corn haters to try it, and TEHY LIKE IT!!
Carmel Corn
1 cup butter
1 cup brown sugar
1/2 cup corn syrup
1 tsp salt
1/2 tsp baking soda
1 tsp vanilla extract
6 quarts poped popcorn(this is equilivant to 2/3 cup un-popped corn)
Directions
1)Preheat your oven to 250 degrees. Air pop your corn ( this gives a crispier crunchier corn) and divide into to two large cake pans and set aside.
2)In a medium saucepan over medium heat, melt the butter. Stir in corn syrup and brown sugar and salt. Stir constantly until it reaches a rolling boil.
3)NOW boil for 4 minuets WITH OUT stirring.
4)Remove form heat. Add vanill and baking soda, stir it in well. It will look like a brown foam. Pour this over your 2 pan of popcorn and stir well to coat.
Put into the oven for 15 minuets, remove and stir to coat again. Do this step 3 more times for a total of 4.
After last mixing pour out onto your counter, or large bowl, to let it cool, about 15 minuets. When cool break up into bite size pieces and enjoy.
Variations
1)Cinnamon carmel corn
add aproxamately 1tbs of cinnamon at step #2, continue to follow the directions.
2)Coconut carmel corn
Replace brown sugar with equal amounts of granulated sugar.
Replace the vanilla with coconut flavoring.
You may add 1 cup of sweetened coconut in step #4.
3)Orange carmel corn
Replace brown sugar with equal amounts of granulated sugar.
Replace vanilla with orange flavoring.
Add 1tsp orange zest in step #4.
The sky is the limit when it comes to changing your flavor.
