Scalloped Potatoes and Ham
20 lb. potatoes, peeled and diced 10 lb. ham, cut up 1 gal. milk 1 1/2 cups flour 4 Tbs. salt [opt.] 1 tsp. pepper 1 1/2 cups butter or margarine 1 lb. Velveeta cheese
Prepare potatoes and ham. Place in a large roaster. Make a paste of the flour and enough of the milk to suit the purpose. Set aside. Heat remaining milk almost to the boiling point. Add flour paste, salt and pepper. Bring to a full boil, and add the butter and cheese and stir until melted. Pour sauce over potatoes and ham, in roaster. Bake at 450° F. for 1/2 hour, reduce heat to 350° F. and bake 1/2 hour more. Serves 60 - 70 |
