Pork Roast and Vegetables
  
 1 pork roast (I generally go withan8 to 10 pound roast)
 4 to 5 Fresh garlic clives sliced thinly
 3 teaspoons dill weed (divided)
 2 teaspoon Rosemary (divided)
 3 teaspoons thyme (divided)
 4 to 5 pounds potatoes
 3 pounds carrots chunked or 2 pkg. of baby carrots
 1 large onion quartered
 2 stalks celery chopped
 salt and pepper as desired
  
 Cut slits in roast and place garlic clices. Sprinkle  2 teaspoons dill weed, 2 teaspoons thyme, one teaspoon rosemary, salt and pepper over  the roast. Cover with foil and place in a 350 degree oven for 2 hours. lower heat to 250 and cook addition four hours.
  
 Two hours before meat is done in a large bowl place carrots, potatoes, onions, celery/ Toss with remaing spices and salt and pepper to taste. 
  
 Remove roast from oven and add veggies. Place cover back on and return to oven to finsh cooking.
