FRENCH CHIVE FISH
Serves 4
1 lb fillet of fish (cod or haddock)
2 slices lean smoked ham
scant 1/4 cup finely chopped chives
good 1/3 cup whipping cream
2 - 3 tsp light-colored French mustard
good 1/3 cup grated cheese
Heat the oven to 425F. Put the fish in an oven-proof dish. Finely dice the ham and mix with chives, cream, mustard, and cheese. Spread this mixture over the fish and put one shelf below the middle in the oven. The fish will be ready in 18 - 20 minutes. Serve with fresh spinach plus boiled potatoes or rice.
