GROUND LAMB KABOBS 1½ pounds ground lamb
½ cup ground peanuts
¼ cup chopped parsley
¼ cup minced onion
¼ teaspoon salt
¼ teaspoon pepper
1/8 teaspoon thyme
2 eggs, slightly beaten
8 stuffed olives
¼ cup butter, melted
Combine first 8 ingredients. Form into balls. Place on skewers with an olive between each ball. Brush with butter. Cook over low to medium heat for 8 to 10 minutes. Yields 4 servings.
