Rhubarb Cookies
3/4 cup sugar 1/3 cup oil 1 egg 1 tsp. vanilla 1 cup rhubarb sauce (unsweetened) (cooked down rhubarb) 1/4 tsp. cinnamon 1 1/3 cups flour 1/4 tsp. salt 2 cups oatmeal (don't use the instant) 1/2 tsp. soda 1/2 tsp. baking powder 1/2 cup chopped walnuts
Mix the sugar and oil together. Add to the sugar and oil the beaten egg, vanilla, rhubarb sauce and oatmeal. Sift all of the dry ingredients together and add to first mixture. Stir in the walnuts. Drop from rounded teaspoonfuls onto a cookie sheet. Bake at 375 degrees for 15 min. or until they turn a golden brown.
