Rhubarb Bread
1 1/2 cups brown sugar 2/3 cup oil 1 egg 1 cup milk 1/2 teaspoon salt 1 teaspoon soda 1 teaspoon vanilla 2 1/2 cups flour 1 1/2 cups diced rhubarb
Topping: 1/2 cup brown sugar 1/2 cup melted butter or margarine 3/4 cup flour
Mix the ingredients for the rhubarb bread in the order given. Place in loaf pans. Combine the topping ingredients and put on top of the batter. Bake in 325 degree oven for 50-60 minutes. Makes one large loaf or 2-3 smaller loaves depending on pan size.
