Baked Plantains
2-3 large plantains ** See note 4-7 Tbs brown sugar Ground cinnamon to taste Ground allspice to taste 2-3 Tbs butter
Trim the ends of the plantains and do not peel but split them in half lengthwise. Make several gashes in the flesh with the tip of a knife. Mix together the brown sugar and spices and sprinkle over the plantains. Dot with butter and place on a baking sheet. Bake in a preheated 400F (200C) oven until the sugar is bubbling, about 20 minutes. Cool slightly before serving.
Serves 4 to 6.
**NOTE Use the ripe plaintains . . . they're black. If you can get only the green ones, let them ripen before using in this recipe.
