GRILLED POTATO SALAD - 1 1/2 lb. baby red potatoes, scrubbed
- 1 Tbsp. cider vinegar
- 1 Tbsp. prepared horseradis sauce
- 1/2 tsp salt
- 1/2 tsp pepper
- 3 Tbsp. olve oil plus extra for grilling
- 1/3 cup sliced celery
- 3 Tbsp. thinly sliced scallions
- 1 tsp. chopped fresh thyme leaves
- 1 large yellow bell pepper, quarted lengthise and seeded
- Boil potatoes in medium sauce pan 15 mnutes, until just tender.
- Drain; rinse under cold water, drain again.
- Halve potatoes, chill 30 minutes.
- Meanwhile in a large serving bowl whisk vinegar, horseradish sauce, salt, and pepper, whisk in olive oil.
- Stir in celery and scallions and thyme. set dressing aside.
- Lighty brush the grill rack with vegetable oil.
- Lightly brush potatoes and pepper with olive oil, grill potatoes and pepper 10 minutes ,turning frequently until browned and slightly charred.
- Remove to a cutting board and dice pepper. stir into dressing and add potatoes.
