Apple Sundae Pudding
2 cooking apples
1 c. all-purpose flour
2 tsp. baking powder
3/4 tsp. salt, divided
1 tsp. ground cinnamon
2/3 c. plus 1/4 c. granulated sugar, divided
1/2 c. milk
1/2 c. chopped walnuts
2 Tbsp. melted butter or margarine
1 1/2 tsp. vanilla, divided
1/2 c. firmly packed brown sugar
1 c. boiling water

Core, peel and slice apples. Place in the bottom of a 2-quart baking dish. Sift flour, baking powder, 1/2 tsp. salt, cinnamon and 2/3 cups granulated sugar into a large mixing bowl. In a separate bowl, combine milk, walnuts, butter and 1 teaspoon vanilla. Stir milk mixture into flour mixture; spread on top of apples in baking dish. Mix together brown sugar, remaining 1/4 cup granulated sugar, remaining 1/2 teaspoon vanilla and remaining 1/4 teaspoon salt. Sprinkle over batter in baking dish. Pour boiling watre over all. DO NOT STIR. Bake uncovered in a 350-degree oven for 30 minutes. Cover lightly with foil and bake 30 minutes longer. Serve warm with whipped cream, if desired.
