Lemon Chicken
1 frying chicken 2½ to 3 pounds, cut into serving pieces 1 cup lemon juice 1/4 cup flour Salt and freshly ground black pepper to taste 1/2 cup oil..your choice 2 Tablespoons packed brown sugar 1 Tablespoon grated lemon zest
Combine the chicken pieces with the lemon juice in a bowl. Marinate covered in the fridge overnight.Preheat the oven to 350 degrees; Drain the chicken well and pat dry with a paper towel. Dredge the chicken in amixture of flour, salt and pepper . Heat the oil in large frying pan and brown the chicken pieces on all sides.
Arrange the chicken in one layer in a large shallow casserole dish. Sprinkle with the brown sugar and lemon zest. Bake for 35 to 45 minutes or until the chicken is tender. Serve while hot....goes well with fried rice and a nice green veggie
