Pork Chop Casserole
4 loin pork chops 1 inch thick...trimmed of fat
6 slices bacon, crisply cooked and crumbled and all grease removed
(Turkey bacon works well)
4 large potaoes, peeled and thinly sliced
1 large onion, sliced 1/4 inch thick
Salt and freshly ground pepper to taste
2 cloves garlic, minced
1 cup dry wine or broth if wine is not desired
Garnish; 1 Tablespoon chopped fresh parley
Preheat the oven to 300 degrees.
Brown the chops in the reserved bacon grease. Arrange half of the potatoes in a deep casserole dish or dutch oven. top the potatoes with half the onion and bacon, season with salt and peper. Add the pork chops in a single layer. layer the remaining potatoes and onion over the chops and sprinkle with salt and pepper.
Mix the garlic with the wine and pour into the casserole. Sprinkle with the remaining bacon. Cover with a double thickeness of foil, then with a casserole lid.
Bake for 1 ¼ hours. Garnish with the fresh parsley
