6-8 large potatoes (diced & fried)
1-1/2 lbs. bacon or sausage (fried & chopped)
2 green peppers (diced)
1 bunch green onions (chopped)
2 tomatoes (sliced)
12 eggs
1-1/2 lbs. co-jack cheese (shredded)
In a large cast iron skillet, layer the first 4 ingredients.
Whip eggs with a small amount of milk or water, pour over
other in pan. Cover and cook on medium-low heat gently pushing
or pulling edges till eggs are set. Add tomato slices and bake
at 350 degrees uncovered for 12 -15 minutes. Add cheese and
bake till cheese has slight crust. Let set for 5 minutes before
cutting into pie wedges.
Serves 6
Note: You can also add mushrooms, black olives, ham, Italian
sausage, polish kielbasa, serve with sour cream & salsa, try
different cheeses.
