1. Heat oven to 350°F. Mix shrimp, cheese, green onion, spices and fruit; set aside. Place 4 tortillas on ungreased cookie sheet.
2. Divide shrimp mixture equally among tortillas, spreading to even thickness. Top with remaining tortillas. Lightly brush with oil and sprinkle with paprika, if desired. 3.
