Curried Chicken with Couscous
Ingredients:
�nbsp;1 package (5 to 7 ounces) curry flavor couscous mix
�nbsp;1 tablespoons butter or margarine
�nbsp;1 pound boneless, skinless chicken breasts, cut into thin strips
�nbsp;1 package Broccoli, Cauliflower & Peppers (1 pound)
�nbsp;1 1/3 cups water
�nbsp;1/2 cup raisins
Instructions:
Remove seasoning packet from couscous mix; set aside. In large nonstick skillet, melt butter over medium-high heat. Add chicken; cook until browned on all sides. Stir in vegetables, water, raisins and seasoning packet; bring to boil. Reduce heat to medium-low; cover and simmer 5 minutes or until chicken is no longer pink in center. Stir in couscous; cover. Remove from heat; let stand 5 minutes. Stir before serving.
