Ham and Cheese Quiche
"This is a hearty, rich and filling pie. Serve with a salad for a complete meal. Yields 1 - 9 inch pie.
Prep Time: 15 Minutes Cook Time: 55 Minutes Ready In: 1 Hour 10 Minutes
2 tablespoons all-purpose flour 1/2 teaspoon salt 1 cup half-and-half 3 eggs 2 slices Swiss cheese 1 recipe pastry for a 9 inch single crust pie 1/2 cup chopped fresh spinach 1/2 cup canned mushrooms 1 (4.5 ounce) can ham, flaked 1/2 cup shredded Cheddar cheese
1 Preheat oven to 350 degrees F. 2 Beat together flour, salt, half-and-half and eggs in a medium bowl. 3 Place Swiss cheese flat in the pie crust. Arrange spinach evenly over Swiss cheese, then cover with mushrooms. Pour the flour and egg mixture over mushrooms. Cover with flaked ham and top with Cheddar cheese. 4 Bake in the preheated oven 45 to 55 minutes, until surface is golden brown.

I used chopped broccoli & mushroom slices instead of spinach. I also sautéed the broc and shrooms in a little butter first.
I used milk instead of cream and I have also used chopped broccoli instead of spinach (when I didn't have any on hand).
I used evaporated milk instead of half & half and doubled the swiss cheese.
I used fresh mushrooms and bacon instead of ham. Wonderful!
I used half a package of frozen spinach, thawed and drained.
I used 2 sliced green onions, garlic powder, and a whole cup of chopped baby spinach leaves, along with all the other ingredients.
A cute idea for gatherings is to make miniature pies for everyone. One 9" pie recipe is equivalent to about 12 miniature pies.
I serve it in tart shells as an hors d'oeuvre. Also, I add one chopped white onion and 1 chopped green pepper,
I made it w/out the crust to lower the calories. I mixed all ingredients except cheese and used spring-form pans to bake.
The only thing I did differently was instead of pie crust I used mashed potatoes.
