Ham Salad
1 cup cooked ham, finely chopped
2 tbsp onion, finely chopped
3 tbsp pickle, finely chopped
1/2 cup celery, finely chopped
3 hard cooked eggs, diced
1/4 tsp salt
1/8 tsp pepper
2 tbsp ranch dressing or mayonnaise
lettuce leaves or sandwich rolls{4} or english muffins{4}
Combine all ingredients except the lettuce & rolls in a med-lg mixing bowl.
Serve as a salad on lettuce leaves, or use to fill sandwiches. Or spread the salad on split english muffins, top with cheese & broil until cheese melts.
*You can also add 1 1/2 tsp prepared mustard into the salad in step 1.
**Instead of salt & pepper, add 1/2 tsp Mrs. Dash seasoning.
Makes 4 servings.
