Ham And Dumplings:
A good ole southern recipe my Mamma taught me to make. It's nothing gourmet, just rib sticking, lip smacking good.
1 ham bone (I use butt or shank portion),
1 small onion chopped,
1/3 cup celery chopped,
1 medium potato peeled and diced,
2 large cans Grands canned biscuits (Mamma made hers from scratch--I cheat and use canned biscuits).
Dash of sage.
salt & pepper to taste. (Ham broth will be somewhat salty).
Place ham bone in pot and cover with water. Bring to a boil, add vegetables and condiments, reduce heat and simmer for 2 hours.
Scrape ham off bone and discard the bone. Flatten biscuits and roll on a pastry board to desired thickness---cut into strips and drop into simmering ham and broth. Let slowly simmer until dumplings become firm. If broth doesn't thicken, you may add thickener. Sprinkle with course ground black or white pepper and enjoy.
