Country Ham Salad:
Ingredients:
2 hard boiled eggs, cut into small pieces,
1/4 c. sweet pickle, chopped,
3 cups cooked and diced Virginia country ham,
1/2 c. chopped celery,
1/2 c. diced green bell pepper,
2 tsp. prepared mustard,
3/4 c. mayonnaise,
3 oz. grated cheddar cheese (Tillamook if possible),
1 small onion diced,
1/2 tsp. fresh ground pepper.
In large bowl, combine all ingredients, blend well. Store covered in refrigerator until serving time. Serve in lettuce cups or on toast. Also delicious on sourdough rolls. Serves 6.
