HAM TETRAZZINI
1/4 cup all-purpose flour
1 cup chicken broth
1 cup milk
1/4 teaspoon black pepper
Salt to taste
1 tablespoon butter or margarine
2 cups sliced mushrooms
1/2 cup green bell pepper -- diced
3 cups cooked wide egg noodles
1 cup cooked ham -- cubed
1/3 cup grated Parmesan cheese
1 tablespoon dry sherry
1/3 cup dry bread crumbs
Preheat oven to 450 degree F. Place flour in a bowl; add broth, milk,
pepper, and salt to taste. Stir the flour mixture well with a whisk.
Melt butter in a nonstick skillet over medium-high heat. Add mushrooms and
bell pepper; saute 3 minutes. Add flour mixture. Cook 2 minutes or until
thick and bubbly; stir constantly. Combine sauce, cooked noodles, ham,
cheese, and sherry in a 1-1/2-quart casserole or a 10-inch gratin dish;
sprinkle with bread crumbs. Bake at 450 degrees F. for 10 minutes or until
bubbly.
