6 pounds lean pork 2 pounds fat pork 2 2/3 tablespoons salt 1 - 2 teaspoons sage (depending on your tastes) 1 1/3 tablespoons black pepper 1/2 teaspoon red hot pepper - ground
Cut meat into small pieces before grinding. Sprinkle all seasonings over meat and mix well, then grind. Wrap up individual packages and freeze.
