Southern Sausage Muffins 1/2 lb. mild pork sausage 1/3 cup finely chopped green onion 1-1/2 cups baking mix 1-1/2 tsp. brown sugar 1/2 tsp. dry mustard 1/4 tsp. ground red pepper (cayenne) 2/3 cup milk 1/2 cup finely grated cheddar cheese (2 oz.)
Heat oven to 400. Grease bottoms only of 12 medium muffin cups 2-1/2x1- 1/4". Cook and stir sausage and onion in 10" skillet until brown, crumbling sausage into small bits. Drain on paper towels. Mix baking mix, brown sugar, dry mustard, and red pepper in medium bowl. Stir in sausage mixture, milk, and cheese just until blended. Fill muffin cups about 2/3 full, spreading batter to edges of cups. Bake 20 to 25 minutes or until golden brown. Cool slightly; remove from pan. Makes 12 muffins.
