Fresh Cherry Cobbler
This Fresh Cherry Cobbler recipe makes 6 servings.
Ingredients �?1 1/4 cups sugar �?3 tablespoons cornstarch �?1/4 teaspoon ground cinnamon �?4 cups pitted red tart cherries �?1/4 teaspoon almond extract �?3 tablespoons shortening �?1 cup all-purpose flour �?1 tablespoon sugar �?1 1/2 teaspoons baking powder �?1/2 teaspoon salt �?1/2 cup milk
Preparation Preheat oven to 400F. Mix 1 1/4 cups sugar, cornstarch and cinnamon in 2-quart saucepan. Stir in cherries and almond extract. Place over heat on stovetop and cook, stirring constantly, until mixture thickens and boils. Allow to boil, stirring constantly, for 1 minute. Pour mixture into ungreased 2-quart casserole and transfer to oven to keep cherry mixture hot. In a bowl, add flour, 1 tablespoon sugar, baking powder and salt and mix, then cut in shortening until mixture resembles fine crumbs. Stir in milk. Remove cherry mixture from oven. Drop dough in 6 spoonsfuls into cherry mixture. Bake 25-30 minutes or until topping is golden brown.
