Noodle Kugel
Filling:
16 ounces medium noodles 1 stick (1/2 cup) margarine 4 large eggs 2 tablespoons sugar 1/2 teaspoon sugar 1 teaspoon cinnamon 16 ounces applesauce
Cook noodles in boiling, salted water. Drain the noodles. Melt margarine and let cool slightly. Beat eggs in large bowl and add applesauce, sugar, spices and melted margarine. Fold in noodles. Melt an additional 1/2 stick margarine to grease a 9x13 inch baking dish. Pour noodle mixture into pan and bake at 350 degrees for 25 minutes. Remove from oven to add topping.
Topping
1 cup finely crushed corn flakes 3/4 cup brown sugar 2 tablespoons melted margarine
Combine corn flakes and brown sugar and stir to remove most of the lumps. Then using a fork, rake the top of the kugel so the crumb mixture will stick. Sprinkle the topping mixture over the hot kugel. Drizzle the 2 tablespoons margarine over the topping, return to oven. Bake at 350 degrees for additional 25 minutes. Remove and let cool before cutting
