Bacon Wrapped Stuffed Pork Tenderloin
Very lean and tender, easy to make and also relatively inexpensive. It tastes great immediately, and the leftovers are fantastic!
Ingredients
1 can whole kernel (undrained) corn
1 package 'Stove Top Pork Flavored' stuffing mix
1 pound of lean bacon
4-5 pound pork tenderloin
Directions
Cut pork tenderloin in half (lengthwise). Cut a slit almost to the end of each half. Mix stuffing with undrained whole kernel corn. Place both halves of tenderloin on bacon on a large cutting board with the bacon placed slightly 'crosswise' to the tenderloins. Fill one of the tenderloins with the stuffing and corn mixture. Note: There will be extra stuffing. Use this by placing the remainder on each side of the tenderloins in a large roaster pan. Place the 'unfilled' tenderloin on top of the 'filled' tenderloin. Wrap the tenderloins with the bacon. Add one or two remaining pieces of bacon on top. Place in large roasting pan and put in approximately 350-375 degree oven(covered)and with meat thermometer inserted.When meat thermometer indicates doneness, remove roaster pan from oven and let roast rest for approximately one-half hour for easier cutting. Cut finished roast with sharp knife or electric knife and serve with cranberry sauce if desired.
