I was working on creating a chjicken roll up when I saw the sun dried tomatoes at the dollar store. After that this recipe just came together.
I liked the sun dried tomatoes in oil as they are easier to work with.
This recipe is actually very easy to make and wasn't all that expensive. I was having company and so needed the two packages of chicken breasts.
We all loved the recipe, with the exception of Doug. He said he liked plain food......LOL of course he doesn't care all that much for chicken breasts either.
The only problem if you want to call it that is that unless you do the extra chicken breasts you will have some the ricotta cheese mixture and sun dried tomato mixture left.
I also next time would get fresh chicken breasts andask the butcher to runthem through one of their machines to flatten them. You have to be careful when punding them out not to end up with mush.
I served the chicken with baked potatoe topped with sour cream and a mixture of onion, garlic, mushrooms and diced ham browned & saute until the onions were transluscent, and green beans.
