- Butter
- Salt and pepper
- Sherry
- Ground red pepper
- Garlic cloves
Instructions: On inside and outside duck, rub with butter; salt and pepper; pour small amount sherry. Brown in butter. Sprinkle inside and outside with red pepper. Add 2-4 garlic cloves. Place in large pot, breast up; cover 3/4 with water. Cover and simmer 3-4 hours. Allow 1 duck per 2 persons.
