One whole opossum washed, dried and every piece of fat removed. Salt, pepper
and flour the opossum. Place in baking pan. Add 1/2 to 3/4 cup water. Let brown.
Cover and cook at 325-350 degrees until almost done. Add large slices of peeled
sweet potatoes around and on top of the opossum. Cover and cook until potatoes
are done.
