   Amount  Measure       Ingredient -- Preparation Method
--------  ------------  --------------------------------
    1       c            Velvetta salsa Dip
      1/2   lb           Ground beef, cooked drained
   10                    Taco shells
    1       c            Lettuce
      3/4   c            Tomato

   Stir velveeta cheese spread salsa dip into cooked
   meat. Fill taco shells with meat mixture,  Top with
   lettuce and tomato
  
Quick and Easy Peach Cobbler by Gaylene

1/4 cup butter or margarine
1/2 cup sugar
1/2 cup flour
1/2 cup milk
1 1/2 tsp baking powder
1 - 2 fresh peaches, peeled and sliced

Melt butter in an 8-inch square baking pan. Mix together sugar, flour, milk and baking powder. Pour batter over melted butter in baking dish and lay peaches on top. Sprinkle with cinnamon and sugar to taste. Bake 350 degrees for 45 - 50 minutes until golden brown. Top with fresh whipped cream or ice cream if desired.
 
Mexican Casserole
 
4 tortillas
2 pounds hamburger
1 onion, chopped
1 clove of garlic, minced
1 med green pepper diced (optional)
Jalapenaos diced (optional)
2 cans diced tomatoes, drained, saving liquid
2 cans black beans
1 can black olives sliced
mexican seasoning of chose ( I use either a  
       package of seasong (preferable) or a mix or
       red pepper, cilintro, cayenne pepper, cumin)
Shredded Chesee (I used yellow  but this can be the
       mexican or taco blend  as well)
 
Optional: For topping: Sliced black olives, sliced green onions, diced fresh tomato, sour cream, & salsa.
 
 
1. Brown Hamburger, onion, peppers, and garlic.
2. In a baking dish put two tortillas on bottom.
3. Top with  grand meat mixture,
4. On top of ground meat, added the  black beans. 
5. Sprinkle the  sliced olives.
6. Pour tomatoes over mixture.
7. top with  shredded cheese
8. Place last two tortillas over top of mixture. Pour reserved tomato juice over top to moisten the top tortillas, so that they don't dry out too much in baking.
9.Bake for 30 mins at 350 degrees.
10. Remove from oven and add aditional cheese to the top, return to oven until cheese on top melts.
11. Top with fresh toamtoes  dices, green onions, and olives.
12. Serve with sour cream and salsa.
 
 
To complete meal serve with a tossed salad and a rice dish that has a mexician twist to it.
 
 
 
Mendocino Chicken Salad
 
Ingredients
  1 (6 ounce) package smoked chicken breast, skin removed, cubed
1 cup seedless grapes, halved
1/2 cup diced red onion
3 stalks celery, diced
1/4 cup fresh basil leaves, cut into thin strips
1 cup blanched slivered almonds
3/4 cup mayonnaise
Directions
  1. In a large bowl, combine the smoked chicken, grapes, red onion, celery, basil, almonds and mayonnaise. Mix well; chill and serve.
