Cheeseburger Soup


Ingredients

 

1/2 LB. Ground Beef
3/4 Cup Chopped Onion
3/4 Cup Shredded Carrots
1 tsp dried basil
1 tsp dried parsley
4 tablepoons of Margarine
1/4 cup Sour Cream (divided)
3 cups chicken broth
4 cups chicken broth
1/4 cup flour
8 oz. (2cups) velvetta, cubed
1 1/2 cups Milk
3/4 tsp salt
dash cayenne pepper
1/4 tsp pepper

Procedure

In a saucepan, brown ground beef; drain and set aside.  In same pan, saute onion, carrots, celery, basil and parsley in 1 tablespoon (2 tablespoons)  Butter untion tender, about 10 minutes.  Add broth, potatoes and beef; bring to a boil, reduce heat; cover and simmer 10-12 minutes or until potatoes are tender.  Meanwhile, in small skillett, melt remaining butter.  Add flour; cook and stir until thick and bubbly, and milk, velveeta, salt and peppers; stir unitl melted, stir the chese mixture into the other pan with the meat and potatoes.  Stir to mix.  When hot through and well mixed, remove soup from heat and stir in sour cream.  (1 added extra water with the chicken broth to cook the potatoes ---- About 2 cups extra -- Because it didn't seem like it had enough water to cook them.
