Pumpkin Bread 1 1/2 c. flour
1/2 tsp. salt
1 c. sugar
1 tsp. baking soda
1 c. pumpkin puree
1/2 c. vegetable oil
2 eggs, beaten
1/4 c. water
1/4 tsp. nutmeg
1 tsp. cinnamon
1/4 tsp. allspice
1/4 tsp. cloves
Preheat oven to 350.
Sift together flour, salt, sugar and baking soda.
In a separate bowl, mix the pumpkin, oil, eggs, water and spices.
Pour into the bowl with the dry ingredients and stir just until everything is mixed. Don't stir too much!
Pour into a buttered 9x5x3 loaf pan and bake 50-60 minutes until done in the center.
Remove from pan, cool on a rack.
Butter Cream Frosting
1 stick butter
1 small package powdered sugar
Leave butter out until it is soft.
Mix in enough powdered sugar to make icing.
Frost the pumpkin bread after it has cooled.
