The Wonder-Fungus-Kombucha



Thank you for this, i love Kumbucha and used it extensively when i was recovering from a serious illness. Some day i will grow it again, we still are reusing all those glass Kumbucha bottles i saved to do so (of course i bought the 100% organic kind). Namasté, ~Nita

Many people have been drinking this tea for thousands of years.
I have been drinking it for 1 1/2 years..This is like ROCKET fuel for your body, I cannot tell you enough about all that I have witnessed since my beginning with this incredible tea.
The taste is somewhere between apple cider and a little tart tasting. bubbly

Some History


The Russians launched on investigation, right after WW2, to discover why cancer was on the increase in their country.After the Boishevik Revolution and continuing thru WW2 Russia had experienced tremendous industrial growth.Factories and gisnt industrial cities were springing up all over & smokestacks were belching industrial smoke and vapors into their atmosphere. Industrial growth and increased military might ws the goal with no concern for the environment. Easily compared to the pollution in England when their industrial revolution was in full swing. Doctors, scientists and other investigators were sent to various parts of the USSR to run tests and investigate the causes of the Cancer Problem.During the investigation they found two acreas( the Solikamsk & Berezniki districts) that were almost cancer free. (the few cases of cancer found in these 2 areas were new comers who had just settled there).

The answer was ...Tea Kvass(aka Kombucha) not only were the people in these two regions cancer free, they were healthier and had longer life spans. Hundreds of years before, the Czar had been introduced to Kombucha by learned travelers that had brought it back from China. After a while the Czar remarked that this tea wine was no longer to his taste and instructed that it be given to the people. His comment was that now even the little people could make their own wonderful tea wine and would stop being covetous. Apparently these 2 areas had been making and consuming tea Kvass(aka Kombucha) ever since. The intense Soviet investigation coupled with other large bodies of evidence indicate that Kombucha is indeed a dramatic immune system booster and body detoxifier. A research facility was readying a batch of Kombucha for attempting to poison Stalin, and the treatment was abandoned. The most that the FDA has said is that it won't hurt.

WHAT IS IT MADE Of ?

Below is a list of some of the major ingredients found in Kombucha Tea:

Malic acid-Used in the bodies detoxifying process

Oxalic acid- Encourages the cellular production of energy and is a natural preservative.

Acetic Acid-detoxifier. It's main function is to inhibit harmful bacteria.

Carbonic Acid- presence in blood cells aids in CO2 release and regulation of blood PH levels.

Folic Acid-a B vitamin, works with vitamin B12 in reducing homocysteine, a risk factor for heart disease. Supplementation may prevent ,correct defidiendies caused by ,ot be helpful with ,Aging, Cancer,Crohn's disease, Heart Disease(atherosclerosis & hypercholesterolemia), Immunodepression (including AIDS & CFIDS),memory loss (including Alzheimer's disease), Osteoporosis, Periodontal disease.

Gluconic acid-acts as a food preservative and is a product of the breakdown of glucose. Is effective against many yeast infections such as thrush and candidiasis.

Glucuronic acid- Vital to detoxification of the body also produced by the healthy human liver. A precursor for mucopolysaccharide which helps in the prevention of the aging of skin tissue.There is a scientific dispute as to whether or not the Kombucha contains this acid or its precursors. Trying to understand this debate and who is right or wrong will give you a headache.

L(+)Lactic acid-detoxifier, assist blood circulation, helps prevent bowel decay and constipation. Aids in balancing acids and alkaline in the body and believed to help in the prevention of cancer by helping to regulate blood PH levels. Lactic acid is essential for the digestive.e system. Interestingly , it is not found in the tissues of people with cancer, and it's lack has been established as an indicating susceptibility agent.

Butyric acid- Is produced by the yeasts and when working with gluconic acid helps combat yeast infections such as Candida.

Nucleic acids- work with the body aiding healthy cell regeneration.

Amino acids(various)-anti-aging properties, aids in the body's production of Growth Hormone(GH). Hydroxy acids (various) Amino acids are building blocks of protein. They build cells, repair tissues, and form antibodies to combat invading viruses and bacteria.

VitaminB1(Thiamin)- believed to aid in the prevention of arthritic conditions, atherosclerosis, cancer, free radical damage, skin aging, stroke, braincell aging, and a immune system stimulant.

VitaminB2(riboflavin)-believed to aid in the prevention of allergies and arthritic conditions.

Vitamin B3(niacin,niacinimide)-believed to aid in prevention of arthritic conditions, hair loss and free radical damage. Aids in healing of skin tissue. Promotes sexual excitation and stamina, also used as a tranquilizer substitute in high doses.

VitaminB6(Pyridoxine)-Believed to aid in the prevention of arteriosclerosis, free radical damage ,obesity, rheumatism, stroke, and promotes "sex flush" and orgasm.

Vitamin B12(cCobalimin, cyanocobalimin)-believed to aid in memory and learning functions.

Vitamin C(from lactic acid)-numerous known health benefits, too many to list!!!! :)

Enzymes- are proteins that act as catalysts that boost the actions of other health giving components within the Kombucha and your body.

"HOW TO BREW"


1.Bring three quarts of water to boil.Continue to boil for ten minutes
.
2.Add 1 cup of sugar and stir until dissolved, then continue to boil for five minutes. You can use brown sugar, but white is more antioxidant. You can use 1/2 cup, or one whole cup. one cup will be more antioxidant.

3.Add 4 to 6 tea bags, such as red rose or Lipton, to the pot AFTER you turn it off. If you already have a sensitive stomach, Green or Oolong tea can be temporarily used though they are not believed to be as effective.

4.Remove from heat , cover and steep tea for ten minutes.

5.Remove tea bags and allow tea to cool to room temperature.

6.Select a large gallon size fermentation container. Be very careful that your tea is not the slightest bit warm. Warm or hot tea will kill your Kombucha Mushroom.I use glass container jars. Suntea jars are not good unless you are willing to completely take the nozzle apart EACH time you use it, for proper cleaning!! This is important.

7.Add your room temperature tea to the selected container. Be very careful that your tea is not the slightest bit warm.

8.
Remove ALL rings, and or metal from the area that will come in to contact with the mushroom. NEVER handle a mushroom near or with a metal object.

9.Carefully place your mushroom into the tea brew and cover the top of the container with a cheese cloth or a coffee filter, depending on the size of the mouth on your container. Some recommend securing the cheesecloth /coffee filter with a rubber band to prevent fruit fly infestation or attracting other insects. IF YOU GET A GNAT , inside the jar, YOU MUST DISPOSE OF EVERYTHING!!!!! No playing games with this stuff. Bury your mushroom outside, thank it. and Get another. DO NOT dump this tea down your drains, outside is OK.

10.Place your container out of direct sunlight. In a closet is best, where the temperature stays between 70 and 80 degrees. Leave the container undisturbed for 7 to 10 day. After 7 days remove the cover and look around the edges of the container for bubbles. These bubbles let you know that the tea is finished fermenting. For weight loss it is best to allow the tea to ferment for 10 to 14 days. Usually at the end of day 8 you are ready to harvest your first batch of tea and your first new mushroom.

11.To harvest the tea carefully pour through a strainer without removing the mushroom from the container. When the container is almost empty remove the mushroom and place onto a glass plate.Don't forget to remove all jewelry and metal from the area near the mushroom. Then slowly peel away the baby mushroom that has formed on the underside of the Mother MUSHROOM while growing in the tea these past 8 days. Congratulations!!!!You are the proud parent of a baby KOMBUCHA MUSHROOM!!!!


12.Do not dilute tea. Keep refrigerated and use within 14 days.
