~eerie's Stuffed Bell Peppers
1 - 3 large bell peppers - cut off tops and clean out the shells - save and chop the top green part to add to seasoning vegs.
2 - 2 toes garlic
3 - 2 med. onions
4 - 3 green onions
5 - 2 stalks Celery
6 - 1 egg
7 - 1/2 cup seasoned bread crumbs
8 - 3/4 lbs of cleaned and deveined fresh Shrimp
9 - 3 sm. pats butter
10 - 1 small can tomato sauce
11 - Olive oil
12 - 1 T. chicken boullion granules
13 - salt and pepper to taste
14 - 1 teas. Tony Chatachories or Old Bay seasoning mix
15 - 1/2 teas. Ms. Dash Pepper flakes
16 - parsley flakes
set cleaned Bell peppers aside in baking dish for later
Chop seasoning vegs and saute in 6 T. Olive oil til clear
add 1 sm. can mushrooms chopped small- reserve liquid
add 6 in. piece of French Bread that you have soaked in water and squeezed nearly dry - in small pieces
cook about 10 mins stirring often
add the mushroom juice and seasonings #12 to #16
add Shrimp - cut in pieces and cook 5 more mins. remove from heat
beat the egg in a cup and add to mixture stirring well
add the bread crumbs
stuff the mix in the Bell peppers
top with the tomato sauce and top with about 1 T. bread crumbs on each pepper and dot of butter
Bake 1 hr in 375 oven
serves 3 as main entree
