~anitas Stuffed chicken Breasts
olive oil cooking spray
4 large boneless skinless chicken breasts
1 10 oz boz frozen chopped spinach thawed
1 4 oz log goat cheese cut into 8 rounds
8 oil-packed sun-dried tomato halves
Ms. Dash red pepper flakes
seasalt and pepper to taste
Preheat oven to 400 degrees
Line a baking sheet with foil and lightly coat with cooking spray
cut each breast almost in half horizontally leaving 1/4 inch of meat uncut.... peel back the top half clam shell style... set aside
Squeeze spinach to remove water
place 1/4 the spinach on bottom half of each breast
top spinach with 2 rounds of goat cheese and 2 sun dried tomato halves... lightly salt + pepper and sprinkle with Ms. Dash flakes
flip top half of chicken breast over the fillings
spritz chicken with olive oil and salt and pepper to taste... top with a sprinkle of red pepper flakes
bake 25 mins and broil for another 5 mins and serve
