Beef And Beans


Ingredients

1-1/2 pounds of boneless round steak
1 tablespoon prepared mustard
1 tablespoon chilli powder I used 3/4 regular and the other 1/4 hot chili
1/2 teaspoon salt, opitional  I used less
1/4 teaspoon pepper
1 garlic clove, minced
2 cans (14-1/2 ounces each) diced tomatoes undrained
1 medium onion, chopped
1 beef bouillion cube, crushed
1 can (16 ounces) kidney beans, rinsed and drained
 
hot cooked rice (i use success rice in the bag.)

Procedure

Cut steak into thin strips. Combine mustard, chili powder,salt if desired, pepper and garlic in a bowl; add steak and toss to coat. transfer to a slow cooker; add tomatoes, onion and bouillion. Cover abd ciij ib kiw fir 6-8 hours. Stir in beans; cook 30 minutes longer. Serve over rice.
Note: I used one can of no-salt tomatoes and one-and a half cans of Rotelle tomatoes with green chillies. To make the second can of 14 1/2oz.. The rotelle only comes in 10 ounces or so. It makes a big difference in the taste but not too hot.  I also doubled the seasonings . This recipe was very good!!!  one cup serving with a half cup of rice comes out to 310 calories, 4 grams of fat, 116mg of sodium if you use two cans of no salt tomatoes and low sodium bouillion. , 25 gm protein, 53 mg cholesterol and 42 grams of carb. which with the beans of 7g of fiber I get to count it off the total carbs for a total of 35 for me. Do not know if all of you get to do this. Your house will smell wonderful and the meat is so tender. Hope you enjoy it all !!!Calories without rice is 215 for a cup fat is 4 gr. serves 6-8. sorry my fingers went crazy earlier that should read cover and cook on low for 6-8 hours. very sorry!!!
