Heat the oil in a small saute pan over medium heat. Cook the shallots untilthey are translucent, about 5 minutes. Add the vinegar and maple syrup. Cook until the mixture is slightly reduced. Season with salt and pepper. Keep Warm. Toss the spinach with the warm dressing and serve Immediately.
I sometimes half the amount of everything if it is just Dave and I. I actually used regular maple syrup, not sugar free and my blood sugars did fine withthis, but I am on insulin. I have tried it with sugar free maple syrup and like it as well.
