This is one I'm making tonight to go along with dinner! 
1/4 cup all-purpose flour
1 large onion, chopped
1 large green pepper, chopped
2 celery ribs, chopped
3 green onions, chopped
3 garlic cloves, minced
2 teaspoons canola oil
2 cups water
2 cans reduced-sodium chicken broth
2 cups cooked brown rice
2 cups cubed cooked chicken breast
1 can petite diced tomatoes ( I sometimes use the no salt ones)
1 teaspoon dried oregano
1 teaspoon dried thyme
1 bay leaf
3/4 teaspoon salt (I will only use about 1/4) and if it is tasty enough use none next time,,,,,,
 
In a small nonstick skillet, brown flour over medium-high heat; set aside. In a dutch oven or soup kettle, saute the onion, green pepper, celery, green onions and garlic in oil until tender;  stir in flour until blended. Stir in the remaining ingredients; bring to a boil.  Reduce heat; simmer, uncovered for 15 minutes.  Discard the bay leaf.   
 
Yield: 7 servings.
 
One serving (1-1/2 cups) equals 197 calories, 3 g fat(1g sat.), 34mg cholesterol, 682mg sodium (less if you use no salt tomatoes and don't add all the salt),
25g carb, 3g fiber, 17g protein!

I'm moving this one up cuz I'm making it for dinner tonight... we have made this one so many times... probably have it twice a month sometiimes more... everytme I make it,, Hubby says~~
This is really a good soup~~ Don't know why it tastes so good,,,, but it does...
use fresh garlic if you can... and if you don't have some cooked already chicken breast~~~ You can buy those packages of it already to go... I cut those pieces up even more... I don't like the big chunks,, prefer my meat get spread out even more...
 
Making cornbread to go with it.... maybe that is why hubby loves it so... he always gets cornbread when I make it,, lol... Happy cooking, Cuddles

oh this sounds really good Cuddles..I love soup. I'll have to save this recipe. I'm making steak and potatoes stew tonight otherwise I'd make this.

Cuddles, I am going to try this.  It sounds almost like a meal in itself!!  I have a hard time getting DH to eat healthy soup, and it sounds like I might be able to trick him!!!

I forgot to add one thing that I put in each bowl of this soup I make~~ I add about half a teaspoon of Chopped Jalepeno's into it.. Now i can't eat things too spicy and  this just adds a really nice little kick... I use the little jars you can find in the produce section usually and after you open the jar you have to put it in the refrigerator.. Might want to give that a try Cody if you really want hubby to like it... WE DO have this as a meal in itself~~~ Sometimes Dave will have a salad before the soup~~ but yeah that is healthy for you~ LOL...
Glad you gals like the sound of it.. glad i brought it up closer to the top..
