Blue Cheese Dipping Sauce: 1/4 crumbled blue cheese 2 tablespoons buttermilk 1/2 cup light sour cream 1/4 teaspoon freshly ground pepper Chicken: 12 chicken tenders, about 12 ounces 1/2 cup hot sauce 1/2 cup all-purpose flour 1 teaspoon kosher salt (I'll leave this part out) 1 tablespoon Cajun seasoning 1 tablespoon butter 2 tablespoon vegetable oil (I'm going to try canola) Blue cheese Dipping Sauce(recipe follows) 4 ribs celery, cut into 3-inch pieces Dipping Sauce: Combine all ingredients in a small bowl, mixing well. With the back of the mixing spoon, mash the blue cheese into the sour cream until almost all of the lumps are gone. Chill in the refrigerator for at least 1 hour before serving. Chicken: Soak the chicken in the hot sauce in the refrigerator for at least 30 minutes. Put the flour in a pie tin and season with salt and Cajun seasoning. Remove chicken from hot sauce, shake off excess, and dredge chicken in the flour. Set on a baking rack. Heat the butter and oil in a large skillet over medium heat. When the butter has stopped bubbling, add the chicken tenders and cook until golden and cooked through, about 3 minutes per side. Remove from the pan and drain on paper towels. Serve warm with blue cheese dipping sauce and celery pieces. Calories:293 Total Fat:16grams Sat. Did make these a couple of times and they are very good... going to make them Sunday for the super bowl,, as close to wings as I can get without so much of the bad fats~~ I did use canola and it worked out fine.... Keep smiling, Cuddles might try the fat free sour cream since there is a good bit of blue cheese in it.. |

This isn't a recipe, but just how I do my spicy wings. Works out great for me, and almost no added fat! I spread the wings on a baking sheet. I lightly (LIGHTLY!) spray them with Pam organic olive oil (the stuff in a can) This gives a coating for the spices to stick to. Then I sprinkle them with salt, garlic, pepper, and then Frank's Hot Buffalo Wing sauce. I use wreckless abandon...but use your judgement. I bake them at 350 until they are almost done (about 30 minutes) and then turn up the heat to 450 for another 10-15 minutes to crisp up the skin. You can use the blue cheese dipping sauce...or you can try this: 1 part Lea & Perrins white wine Worchestershire Sauce 1 part soy sauce 1 part hot sauce VERY spicy, but good! I also do an Oriental type wing Put wings on a pan, as above. Mix up soy sauce, mustard, toasted sesame oil, apricot all fruit spread, and garlic. Spread on wings. Coat wings with sesame seeds. Bake as above. Unfortunately, I never measure anything, so I can't give you amounts. Sorry. But I make wings all the time, and they always seem to come out yummy! Enjoy! |
