I was watching the PBS station with the cooking on it and the uncle and nephew that do the italian show and they did a broschetta (I don't even know if that's how you spell it and if not please accept my apology!!) and I have got to know how to make it!! It looked like they toasted (on a fire place/oven and it was on an open fire) it and then when they got it off they put a piece of garlic (that had been sliced) and then some olive oil and then some dressing like tomatoes, basil, oregano and stuff like that. I just gotta find out! lol...it looked sooooo good!  Does anyone know if I spell it right and where I might find a recipe for just the boschetta bread and maybe how to cook it? Thanks for any info!!!

yeah Tammie,,, I know what you are talking about and you know perhaps I don't bake breads,,, so when we make it(Candice actually has the great way to do it),,,, we buy a Baquette from the bakery section of our local grocery store and yes when the slices come out of the oven where you toast them for a few minutes,,, you take a cut Clove of garlic and rub on the hot bread,,,, then you add the other ingredients,,, like tomatoes, feta cheese, oregano, Basil,,,, etc.. that you have mixed up in a bowl,,,,,,, pop them back in the oven broiler for just a bit and presto,,,,,,,, a great appetizer! Just keep an eye on them, cuz they can burn quick on you!

Squashed Cherry Tomato and Smashed Olive Bruscetta

Ingredients
2 handfuls cherry tomatoes
1 handful black olives
4 to 5 tablespoons extra-virgin olive oil
1 tablespoon dried oregano
A drizzle herb vinegar
1 dried chile
A handful fresh basil
Sea salt and freshly ground black pepper
1/2 ciabatta or other rustic bread, cut into thick slices
1/2 clove garlic
4 boccacini
Parmesan, for shaving

tasty for that. Very few ingredients, simple flavors, complete sense. Try to make use of the wider
range of cherry tomatoes available now: yellow, tige, and plum cherry tomatoes for instance. And, as
I always say, it's much better, taste-wise, to buy olives with their stones still in than without.
Trust me.
Simply squash your tomatoes into a bowl. I always have to put one hand over the tomatoes as I do
this as juice and pips go everywhere (generally on me). You can be as rough with the tomatoes as you
like, as the salad looks much better rough and rustic than perfect and pretty. Then, gently smash
the olives on a board with a hard object, like a cup or a rolling-pin. Remove the stones, throw the
olives in with the tomatoes, and toss together. Add a few glugs of oil, the oregano, a drizzle of
vinegar, crumbled chile, and rip in the basil. Season, to taste, and that's your salad.
Griddle or toast the slices of bread and rub with the garlic clove, pile on the tomatoes, and rip
the mozzarella and lay over the top drizzle with a little bit more oil and finish with shaves of
Parmesan.

Bruschetta
Bruschetta is one of the simplest things in the world to make, and can be very satisfying if you have good extravirgin olive oil.
PREPARATION:
You will need 4 six-inch wide slices of Tuscan bread. Toast them, over the coals if possible (though a toaster will work fine if need be) gently rub them with a cut clove of garlic (you don’t want to overwhelm the oil), then drizzle them with good olive oil.
Season with salt and pepper to taste, cut the slices in half, and serve. Serves 4.

There are lots of variations to bruschetta. Here's one of the tastiest: After rubbing the slices with the garlic, rub them with a very ripe cut tomato as well (or spread a thin layer of chopped tomatoes seasoned with basil, salt & pepper over the slices). Then sprinkle with olive oil and season. In addition to being a fine appetizer, this is a traditional merenda, or afternoon snack (unfortunately it’s not as common now that Kinder and other companies are producing pre-packaged cakes).

Don't forget, if you are having a barbacue, that bruschetta is an excellent way to begin.
