My mom just loves this (and so do I).
In soup pot add the 15 oz. sized cans *with* liquid:
- sliced carrots
- diced tomatoes
- stewed tomatoes
- green beans
- zucchini in tomato sauce
- chicken or beef broth (any kind--we prefer Swanson's low sodium in the cartons and I measure out 2 cups).
Heat to simmer and simmer about 10 minutes.
35 calories per cup
Weight Watchers, one cup is 1/2 point
Even better on day 2 or 3. I use low sodium veggies when they are available. I also just add leftover, fresh, or frozen chopped veggies and microwave them if they need it before adding with some water to simulate canned. This soup has saved me on numerous occasions. I'll have a cup of soup before I eat anything else and it really helps calm the beast.
