Barley Bread or Rolls Prep Time: 4hr
Serving Size: 1 slice (1/16 of loaf)
Makes: 2 medium loaves
3 cups bread flour (approximate)
1 cup Heart Balance Cereal
1 package instant yeast
1/2 tsp sugar
1 1/4 cups water
1 egg
1/4 cup canola oil
1/4 cup molasses
1 1/2 tsp salt
Directions Combine yeast, sugar and 1/4 cup of the water. Allow to sit for 5 minutes. In a large mixing bowl, combine egg, oil, molasses and remaining 1 cup water. Mix well. To mixture add 1 cup bread flour and beat well. Stir in yeast mixture. Gradually add Heart Balance Cereal and salt. Add bread flour, beating until dough may be easily handled. Turn onto a lightly floured surface and knead at least 10 minutes until dough is smooth and elastic. Add flour as needed to prevent sticking.
Place dough in a lightly greased bowl and cover. Let rise 1 1/2 hours until doubled in bulk in a warm, humid place (warm oven with a pan of warm water).
After dough has doubled, punch it down. Turn out onto a lightly floured surface and shape the dough into two rectangles to fit into greased bread pans (or dough can be shaped into rolls). Cover and let rise as before until double, about 1 1/2 hours.
Preheat oven to 375°F. Bake for 35 minutes. Cool in pan for 5 minutes, then place on cooling rack.
