1 tablespoon sugar
1 tablespoon grated lemon rind
1 teaspoon salt
1/4 teaspoon black pepper
1 Salmon filet (1 1/3 pounds) about 1 inch thick.
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon ground cinnamon
 
1. Combine sugar, lemon rind, salt , pepper, cumin, coriander and cinnamon in small bowl to make dry rub. ( Sometimes I double the amount of the ingredients, except salt if I am using three salmon steaks) Rub misture over entire salmon. Cover and refrigerate at least 30 minutes.
2. Heat oven to 425. Coat shallow baking dish with nonstick cooking spray. Cut salmon into four equal pieces if using fillet. Place salmon, skin side down, in baking dish.
3. Roast in 425 oven for 12 to 15 minutes or until fish is easily flaked with a fork.
I cook mine about twenty minutes, and so far it has come out very well. Sometimes I lower the temperature the last five minutes and it has never come out dry!!!!!
Hubby hates salmon and actually likes it this way! Hope you do too, my other way to eat Salmon is with the Sizzle of Corn and Tomatoes. That recipe is up on the site in the grey area at left!!!! Keep smiling, and good eats, Cuddles

Cuddles' Moroccan Salmon ROCKS!!!  I can't remember the last time my own cooking ever tasted this good!  lol  Thanks so much for sharing this with us - it wasn't hard at all and most of it can be done in advance so that you can make anything else you are serving while the salmon cooks itself.  My son made a HUGE salad to go with it so that is all we had with it.  The only countable carbs in the meal were the chick peas in the salad and the sugar in the salmon rub so I only bolused 2 units and my BS was perfect afterwards.  There was some left over, so this morning my son and I split it and put it in sandwiches of whole wheat blueberry bread.  I didn't have a carb count for the bread and I must have underestimated at 20 carbs per ounce.  I think it was more like 25 for this bread - very sweet and delicious.  Anyhow, Moroccan salmon for breakfast is a great way to start the day!!  You take such good care of us, cuddles!  Thanks again!
