1 can (20 ounces) pineapple tidbits (unsweetened)
1 package (6 ounces) lime gelatin (sugar-free gelatin)
1-1/2 cups boiling water
1 cup ginger ale, chilled (diet)
1/4 teaspoon ground ginger
Drain pineapple, reserving juice; set the pineapple aside. In a bowl, dissolve the gelatin in water. Stir in ginger ale, ginger and the reserved juice. Chill until syrupy, about 45 minutes. Fold in the pineapple. Transfer to a 6-cup mold coated with nonstick cooking spray. Refrigerate until firm. Unmold on to a serving platter. Yield 12 servings.

Haven't tried it yet, but will be doing it this Thanksgiving. Have had the sugar version before.

This sounds really good.  Thanks for posting that.  I used the sugar free jello all the time for desert with a squirt of whipped cream on top of it.

Bumping for Deva incase this is what she meant by a recipe with Pineapple in it. I looked through the recipes on this section/threads but didn't see one for cake or pudding! There are some other recipes under the thread TITLED Diabetic Recipes in the blue box. Right between Documents and Nutrition Facts.  Might find one in there! Happy cooking, Cuddles
