1 pound fresh green beans, cut into 1-inch pieces
1 can (15-1/2 ounces) black-eyed peas, rinsed and drained
1 cup grape or cherry tomatoes
1 small red onion, chopped
2 tablespoons balsamic vinegar
1 tablespoon olive or canola oil
3 garlic cloves, minced
1/2 teaspoon salt
1/4 to 1/2 teaspoon crushed red pepper flakes
1/4 teaspoon mustard
2 tablespoons sesame seeds, toasted
Place beans in a saucepan and cover with water. Bring to a boil. Reduce heat; simmer, uncovered, for 5-7 minutes or until crisp-tender. Drain and rinse with cold water; pat dry.
In a large bowl, combine the beans, peas, tomatoes and onion. In a small bowl, whisk the vinegar, oil, garlic, salt, red pepper flakes and mustard; pour over bean mixture. Sprinkle with sesame seeds. Toss to coat. Let stand for 1 hour at room temperature before serving.  Yield-8 servings.
One serving (3/4 cup) equals 97 calories, 2g fat(trace saturated), 0 cholesterol, 259mg sodium, 13g carbohydrate, 4g fiber, 4g protein.
I haven't made this one yet,, but am taking it with me to Mom's for Christmas,,, Low in cals,,, and it sounds good!!!

We never tried this one for Christmas as I said we would, but Dave and I had it Monday night,,,, and it was fantastic!! So nice to make it first and then prepare the rest of the meal while it sits covered on the side,, Very, Very yummy!!! And yes,,, I used the 1/2 teaspoon of red pepper flakes and some of the salt!!! Yum this sounds good. I love toasted sesame seeds. I make a salad with cubed cheddar cheese , radishes of course lettuce and tomatoes and toasted sesame seeds. I'll have to try yours Kathy. it sure sounds yummy!.

You know how much we make fresh veggies salads mary,, and this one is one of the best!!! Have to say the few left overs we had the next day,, were not as good slightly room tempertature,,, something about mixing it up and eating it an hour or so later,, no frig. time!!!! I will make it again in a second, and can hardly wait to have it when I have fresh green beans and tomatoes, yummmy,,,,

Making this one this week with the fresh veggies from the market.. Going to half the ingredients cuz as I said it isn't quite as good once refrigerated... don't know why... so making half the amount...
