4 cups chicken broth(I use Low sodium ones)
2 cups cubed cooked chicken
2 celery ribs, chopped
2 medium carrots, chopped
1 medium green pepper, chopped
1 medium onion, chopped
1/3 cup uncooked long grain rice
1/4 cup minced fresh cilantro or parsley
1/2 teaspoon dried oregano
1/2 teaspoon salt, optional
1/2 teaspoon pepper
1/4 teaspoon cumin
1/8 to 1/4 teaspoon crushed red pepper flakes
In a large saucepan, combine all ingredients. Bring to a boil. Reduce heat; cover and simmer for 20 -25 minutes or until rice and vegtables are tender. Yield 6 servings.
One serving(prepared with low sodium brothe and without salt) equals 135 calories, 100mg sodium, 31mg cholesterol, 17gm carbohydrate, 11gm protein, 3gm fat, 2gm fiber.
Very tasty,,,, I used the 1/4 teaspoon crushed red pepper,, because I did not use the salt.

You are welcome Caren!!! It is pretty easy too,,, just throw it all together,,,, Had to get these up here so I could print them off to take with me,,,, I'm also taking along my soup pot,,, lol,, and my spices,,, and my knifes,,, lol. Enjoy!! Keep cooking, Cuddles

this one is dinner tonight... with buttermilk Cornbread... Can't believe I have had this recipe for 4 years... we use it often.. Hugs..
