1 pound dried pinto beans
8 cups fat-free, less-sodium chicken broth
2 cups chopped onion
2 cups water
1-1/2 cups chopped smoked ham steak (about 8 oz.)
1 tablespoon chili powder(I used half chiptole chili powder and half regular)
2 teaspoons ground cumin
2 teaspoons dried oregano
3 bay leaves
3 garlic cloves, crushed
1 (14.5-ounce) can diced tomatoes, undrained
1 chipotle chile(or dried ancho or pasilla chile)
1/2 cup(2 oz.) shredded Manchego cheese or Monterey Jack cheese
1/2 cup minced fresh cilantro
1. Sort and wash beans; place in a large Dutch oven. Cover with water to 2 inches above beans; bring to a boil. Cook 2 minutes; remove from heat. Cover and let stand 1 hour. Drain.
2. Combine beans, broth, and next 8 ingredients in a Dutch oven, bring to a boil. Partially cover; reduce heat to medium-low. Simmer 1-1/2 hours or until beans are tender.
3. Stir in tomatoes and chile; simmer 30 minutes. Discard bay leaves and chile. Ladle soup into 8 bowls. Top with cheese; sprinkle with cilantro. Yield 8 servings.
1-1/2 cups serving equals:
Calories- 303, Fat- 4.2 g(sat.1.8g, mono 1.3g, poly .5g), Protein- 20.3g Carb-46.8g, Fiber- 16.1g, Chol.- 22mg, Iron-4.3mg, Sodium- 958mg, Calcium- 153mg.
Now this soup was pretty spicy, so next time for myself, I will use less of the chipotle chili powder, more of the regular type) It is very good though, and you get alot of your daily fiber right here in a bowl! My sugars were great for about 12 hours afterwards,,,, It smells wonderful while cooking and that is the hard part,, waiting for it to finish,,, lol,,, Smiles, Cuddles

Let me know Mab how you liked it when you are done,,, or if you did even,, LOL!!! If you like it spicy,,, use the chipole chili powder if  you can find it,,, it adds such a nice deepness/flavor to the dish!  How do pinto beans rank on the GI index Mab? Or anyone for that matter,, just curious,,, of course i could go to Mendosa's site and figure it out for myself,,, lol,,, just thought one of you might know out there,,, Keep cooking, Cuddles

bumping it up for Tams!!! It is really good if you can handle the carbs~~~ course for me the fiber helps alot! Let me know if you ever try it and like it please!!! Let me know even if you don't,,, lol!!!!!!
