Gardening : Want advice- Freezing my garden veggies

I have picked so much from our garden and now need to freeze some of it. It has been awhile. For my greenbeans and snow peas, is blanching them then storing in the freezer in freezer ziplocks OK or is there a better method?
 
How about cucumbers & beets? I want to enjoy some this winter also.
 
We are really enjoying the garden veggies but have so much of it. The tomatoes I and the rest of the things I'm OK with what to do.  Suggestions?  Angelbear

You might want to invest in a food saver. It vacuum seals your food and it keeps a lot longer in the freezer. I wish that I had some words of wisdom for storing things but I don't but I do love veggies!

Quite a few years ago my aunt froze her green beans a really easy way and they tasted wonderful when cooked.
 
She just gathered up her beans, did not wash them or anything, and stuck them in a pillow case and stuck that in the freezer.  She could get out the amount she wanted and then wash the dirt off of them in warm water and that seemed to work quite well.
 
Beets will freeze okay, but cucumbers do not freeze well.  Egg plant does not freeze well.  Okra freezes well - either whole or sliced. 
 
You can stick whole tomatoes in the freezer to use for cooking in the winter...they will split some because of the water content but are quite useable still.

Adair I have always canned my green beans but the pillow case method sounds like a good idea and whole lot easier. I do do my tomatoes the way you say the skin comes off really good after frozen too. I freeze the okra and sugar snaps too. Blanching is always best. Have never done corn but once and did not like the taste of it after it was frozen.  Anglebear good luck on freezing your veggies.

I loved the pillowcase method. How uniques, I will try it. LOL! Everything else I should blanche then, like the beets, snowpeas?  Carrots?
 
So the tomatoes can be kept whole and put in bags in the freezer then when I remove them in the winter, the skin will peel easy? The taste will not be gone? Our tomatoes are big but not red yet. I'm getting concerned but the weather has not been ttah warm.  Its like falltime here lately.

Beets:  Peel (wear rubber gloves doing this or you will have red hands for a month) slice and put in your bags. If you blanch the beets the peel will come off easier.
Snowpeas. yes blanch
Carrots: never froze any but I would blanch them too.
Tomatoes. I lay them out on a tray or cookie sheet put into the freezer. Once frozen put in a plastic bag. They will loose a little flavor but not much.
 Hang in there they will ripen soon. Mine are just turning. Your right though it is like fall here too.
